Welsh cakes
These are delicious any time of year, but especially appropriate on St David's Day (1 March).

Ingredients

125g Co-op unsalted butter 250g Co-op self raising flour, plus extra for dusting 100g Fairtrade caster sugar, plus extra for dusting 100g currants 1 tsp mixed spice 1 Co-op British free range egg, beaten;

Method

1. Using your fingers, rub the butter into the flour, in a large bowl, until the mixture resembles breadcrumbs 2. Stir in the sugar, currants and mixed spice 3. Add the beaten egg and mix well to form a dough 4. Tip onto a lightly floured surface and pat or roll out into a circle about 5mm thick 5. Use 6cm cutters to cut out 20 circles, then griddle on for 2-3 mins each side, over a medium-high heat, until golden 6. Dust with extra caster sugar to serve, then eat immediately
